Morrocan Coconut & Chick Pea Soup

This recipe is dairy-, egg-, meat- and gluten- free!! And it is DELICIOUS! I tweaked a recipe I found at Katrina's Kitchen

3 cups vege stock
4 cloves of garlic, chopped
1 large sweet potato, diced
1 large white potato, diced
1 onion, chopped
1 can tomatoes (you could totally use the fresh equivalent)
1 can chick peas
1T curry powder (or to taste)
1/2t cinnamon powder
salt & pepper to taste

add in just before serving:
1-2T chopped, fresh cilantro (coriander)*
1 cup packed baby spinach
1 small box coconut milk

* I can't get fresh coriander here, so I used 2t of dried cilantro at the beginning, putting it in with the olive oil, etc.

Fry onion, garlic, potatoes and curry powder in a little olive oil, just until onion starts to turn clear. Add in the rest of the ingredients and allow to simmer for about a half hour. About 10 minutes before serving, add in coriander, spinach and coconut milk, and allow to heat through but not boil.

I served this with a little cooked brown rice in the bottom of the soup bowl and it's sooooo yummy! And healthy, right? The coconut oil in the milk is a healthy (healthier??) oil!!
