Potato Bake recipes?

Does anyone have a favourite potato bake recipe to share? :roll: :)
I'm Tracey from Sydney, married to Cameron and mum to Andrew (17) and Claire (13).

yeh off the top of my head...

Peel and slice thinly about 8 large potatoes.
Layer them in a oven proof dish
Add sliced onion, diced bacon.
Mix together 1 large pot of cream and 1 sachet of french Onion soup then pour over potato.
Top with grated cheese
Bake in oven for...ages..lol

You can par boil the potatoes to make the cooking process quicker :)

I also stick it all into a microwave dish and cook it all in there...not as nice as oven baked though

I've always used milk instead of cream to keep the fat content down. It always tastes yummy to me!! I use milk and french onion soup mix usually. Then add bacon bits and shallots and sometimes grated carrot in between layers. Then of course cheese sprinkled on top. Its not fancy or anything, but still yum!

Gayle my Mum used to do it in the microwave & finish it off in the oven

this is one our family has really enjoyed.

Prosciutto Potato Bake
Serves 4

100g prosciutto
2 cloves garlic, crushed
1 Tbs mixed fresh garden herbs (such as sage, parsley, oregano)
300ml light cream
Black pepper, to season
Sea Salt to season
1 Onion, peeled and thinly sliced
1.2 kg large potatoes, peeled and sliced thinly
1 cup or 100g grated mozzarella
1/2 cup or 50g finely grated parmesan

Preheat the oven to 190C. Grease a 20cm * 28cm (10 cup capacity) ovenproof dish. Preheat the grill on high.

Grill the prosciutto slices on both sides until just starting to crisp. Set aside.

In a large bowl, combine the garlic, herbs, cream, pepper and salt.

To assemble, scatter a few onion slices in the base of the oven dish. Dip the potato slices into the cream mixture, then cover the onion with a layer of potato, overlapping them slightly. Scatter the remaining onion and the half the mozzarella and parmesan. Top with the prosciutto and the remaining potato slices. Pour over the remaining cream mixture and top with the remaining mozzarella and parmesan.

Bake for 45 to 50 minutes until golden and bubbling.

Hey trace :) Here's the link to one I shared on my blog a month or so ago which is 'safe' for our family. Quick + easy + yummy (although i'd love to add a thick layer of grated cheese on top if i could! lol!)

Tracey, instead of cream, I used Light Carnation milk in might too ( we call it skinny tinny) that cuts the fat content right back too, but still does give it that creamy taste without the fat.

Thats what I do too Karen and we also start ours in the microwave and finish in the oven.

yep do that too Gail, and sometimes if I am in a real hurry it all gets done in the microwave. I sprinkle chicken stock over mine before pouring over the Light Carnation Milk. Some of the soup mixes sound good though and I'm thinking I might give that a go too.
