Cornflake Honey Slice

1 1/2 cups Cornflakes
1 1/3 cups rolled oats
1 1/3 cups coconut
3/4 cup castor sugar
125g butter
2 tablespoons honey

Lightly grease a 19x29cm lamington tin (or I just lined mine with baking paper so I could lift the slice out easily at the end).
Preheat oven to 180 degrees celsius.

Combine Cornflakes, rolled oats, coconut and sugar in bowl. Melt butter in saucepan, add honey, stir into dry ingredients.
Spread into prepared tin. Bake for about 20 minutes. Stand 15 minutes in tin before cutting. Allow to cool in tin (if you can resist the temptation to munch some warm!).

This was a big hit with all my family. It is supposed to be fine to freeze but keeps really well in an airtight container too.

I had a go at this one and as I went through it I realised I didnt have half of what I needed! I used rice bubbles instead of cornflakes and only had 1 tbsp honey so substituted one of maple syrup - in the end it didnt hold together so well (not surprising :lol: ) but it was absolutely scrummy! And crumbled over ice cream it was just divine! Thanks Cass! :D :D
