Crabapple Cupcake Bakery icing help

OK girls

I asked this on the old forum but forgot to save it. I was wondering if anyone who has the Crabapple Cupcake book if they could share the Buttercream icing recipe out of there.

I am making 60 cupcakes on Thursday and Friday for one of kids programs - all the mums are going to have coffee and cupcakes while the kids do a mothers day craft.

I remember using this icing recipe before - it was delicious.

Hi Megs,

Recipe is below, I googled it because i was interested in a good cupcake icing recipe. :) Have fun baking. :D


Crabapple Cupcake Bakery
Vanilla Buttercream Frosting:

(Makes enough for about 24 cupcakes)

220g softened unsalted butter
1/2 cup milk
1 tbs vanilla extract
8 cups icing sugar

Cream the butter for 1-2 minutes.

Add milk, vanilla extract, and half the sifted icing sugar, and beat for at least 3 minutes or until the mixture is light and fluffy.

Add the remaining icing sugar and beat for a further 3 minutes or until the mixture is light and fluffy and of a spreadable consistency.

Add extra milk if the mixture is too dry, or extra icing sugar if the mixtre is too wet.

I've been introduced to a different butter cream icing which I've been using lately.

It uses half butter and half vegetable shortening (kremelta) ... it tastes a little different than full butter icing but holds it's shape better when piped. I made a chocolate version on Saturday by adding cocoa powder ... yummo! :D
